Preparation Steps
- Prepare the batter: In a bowl, whisk together the cold water and egg. Gradually add flour, mixing lightly. The batter should remain lumpy for a lighter texture.
- Heat the oil: In a deep pot, heat oil to 350°F (175°C).
- Prepare the ingredients: Slice vegetables into thin strips. If using seafood, devein the shrimp or slice the fish as desired.
- Fry the tempura: Dip the vegetables or seafood into the batter, allowing excess batter to drip off. Carefully add them to the hot oil in batches. Fry until golden brown and crispy, about 2-3 minutes.
